Can anyone recommend any quirky/unique luxury hotels in England?

For my DP’s birthday. I was looking at the Brewdog hotel in Manchester but apparently Brewdog have a bad history so I’m looking for something similar that’s within a 2 hour drive from Stoke on Trent?

Cley Windmill in North Norfolk, luxury b&b but very quirky, you can even stay in the wheel room.

We’ve stayed at the Oxford Malmaison, loved it! We’ve also stayed at the crescent in Buxton which was just amazing. I’ll have a look at the other recommendations thanks!

Portmeirion is unique. Expensive, though worth staying there once.

Fox hill manor in Cotswolds. It's amazing- no reception, no menu- just meet with the chef and tell them what you fancy x
