Squeeze them out of their skins. Roll them into little ball shapes and pan fry for meatball pasta with whatever sauce you like.

Meatloaf? Squeeze out of skins, combine with breadcrumbs, onion, herbs etc and bake in a tin.

Yeah, make little flat meat balls out of them. Have with home made tomato and basil sauce and spaghetti.

Or Nigel Slater's sausages with cream and mustard (also a pasta dish) which is self indulgent but yummy.

Jamie Oliver also does a nice Italian sausage and lentil dish salsicce con lenticchie

Chop them into small pieces and fry or roast mixed with sliced peppers, onions and cherry tomatoes and some herbs.. Serve with jacket spuds.
