@SunshineLollipopsAndRainbows Funnily enough that's what we had for dinner last night
Recipe from a book called The Bean Book by Rose Elliot (try and get it if you can)
1 onion chopped and fried, few garlic granules, chilli flakes. Fry off then add
6oz red lentils - cook for a bit before adding a
400gm tin of chopped tomatoes,
3/4 tbs water, same of red wine. Simmer for 5 mins, add
6oz chopped button mushrooms, simmer till everything is soft.
Make pancakes (add 1tbs oil to batter so pancakes roll easier)
Cover until needed to keep them pliable
For each one sprinkle 1 tbs grated chees on before adding lentil mixture. Roll or fold as desired.
Lay stuffed pancakes in gratin dish and pour half a pint of well seasoned cheese sauce over. Bake as you would a lasagne.
