Anyone have any good lemon cake receipes?

Hi!

I need to make a lemon cake this weekend (circular shape rather than loaf), does anyone have any tried and tested recipes? I’ve done standard lemon drizzle which is probably fine but any more interesting recipes really welcome too! Caveat I am not a hugely experienced baker so nothing too tricky!

I like this - although I use all ground almonds rather than a mix of that and polenta as it's a little gritty otherwise imo

Gluten-free but I enjoy it nonetheless even though I can happily eat gluten!

Or I'd go for a lemon curd cake with mascarpone. Not made one but thinking it needs to happen...

I rate the Mary Berry Whole lemon cake - although I've put lemon curd and butter cream in it before rather than the mascapone that she states.

I use the Mary Berry crunchy top lemon cake…just made one today and works a treat. I make icing with lemon juice and icing sugar I stress of the crunchy sugar topping.

oven pre-heated to 160c, Weigh eggs, same amount sugar, flour, marg. Cream sugar and marg. Add beaten eggs, gradually. Drop in flour through sieve,a little at a time. carefully fold in. 8inch tins. Cook till golden brown,still slightly soft to touch. When cool,lemon curd in center.on the top I use cream icing....icing sugar/marg,a few drops of cicilian lemon flavour,and a few pieces of lemon zest and peel.

this is more of a tart but is really easy to make & delicious

Lotus biscuit lemon tart

Weigh 4 eggs, same amount of butter, caster sugar and sr flour. Cream the butter and sugar, add eggs one at a time and mix well. Fold in the flour and the zest of a lemon. Split into 2 circular tins or just one and can divide tte cake after cooking. Cook at 170c for 23-25 mins until golden (35-40 if mixture all in one tin). Sandwich with vanilla buttercream (salted butter, vanilla extract and icing sugar). Top with thick lemon icing made with icing sugar and the juice of the lemon. An absolute winner 🏆

This is the one I like the best. We all love it.
