night in on my own...what to cook?

My go to is spaghetti carbonara or mussels. What to eat for a rare night in on my own. Not takeaway as they are all a bit rubbish round my neck of the wood....

I would have a cheese platter with fresh baguette and chocolate cake for dessert. Less washing up and easily eatable in front of the tv!

If you go with the cheese you need all the accomplishments. Celery, grapes, a good selection of crackers, caramelised onion chutney, pickled onions, cocktail gherkins!

I almost always go for a baked camembert, crusty bread, onion chutney and a glass of red wine. Easy, quick, minimal washing up and delicious.

Or I also really like toasting an english muffin, topping with fried mushrooms, peppercorn sauce and crumbling a bit of blue cheese over the top.

Flash fried scallops in butter with a squeeze of lemon juice, served on rocket or watercress. Maybe a Magnum for pudding!
