Please help me remember baked chicken recipe

I've googled for an hour!

I used to make a traybake that was chicken, red pepper, lemon...maybe potato? Maybe garlic?

It was delicious cold so ideal for picnics.

Pretty sure it was an Itian recipe.

I've got 14 chicken breasts....used to cook this all the time but not for 10 years.

Any other suggestions...something low effort ideally

Did it have sweet potato? We always love this one from Nathan Outlaw but it only has red chilli and not red peppers.

Those both look amazing and the brilliant news is...I've also got 8 chorizo sausages (basically got a load of yellow sticker meat which I know want to batch cook!).

Which one to choose!!!

I think I know the baked chicken breast recipe you are searching so desperately.
Ingredients:

  • 14 chicken breasts
  • 2 red peppers, sliced
  • 2 lemons, sliced
  • 1 pound baby potatoes, halved
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
Instructions: Preheat your oven to 400°F (200°C). Place the chicken breasts, red pepper slices, lemon slices, and halved baby potatoes on a large sheet pan. In a small bowl, combine minced garlic, olive oil, salt, and pepper. Drizzle this mixture over the chicken and vegetables. Toss everything together to ensure even coating. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. Once done, let it cool and enjoy cold as a picnic dish.

Hahahaha....that is indeed the one!!! I posted this minths ago. God knows how you even found it but thanks. It's so yummy isn't it. So easy i used to make it all the time without a recipe. Then got out of the habit and couldn't remember it. Thanks for being so kind.
