Ideas To Use Jar Of Grilled Peppers

Bought on impulse from Aldi & apart from possibly putting them on a pizza or in a pasta sauce, I’m not sure what to do - they’re in sunflower oil.

Add to salads, lentil dishes, add partway to a chicken traybake?

Chop them up and add to couscous or salads, I like them added to chickpeas and feta for a lush lunch - make a dressing with olive oil, white wine vinegar, chopped parsley and spring onions for added deliciousness.

Fry some courgettes in oa bit of olive oil and garlic until slightly caramelised. Drain jar and add with some creme fraiche and parmesan. Salt and pepper. Pasta sauce - penne.

It's a staple quick cook in our house.

Add it to anything you'd use normal peppers/any other veg for. Curry, pasta, tray bakes. That's what I do anyway.

Or on a salad, I sometimes do that too.

Slice peppers into slivers and add to a cheese or ham sandwich.

Chop peppers, semi dried tomatoes, grilled artichokes (all in oil) and stir together with olives and crushed garlic for a colourful tapas to have with drinks.

Use peppers with tomato and olives to bake in foil with any white fish.

Add chopped peppers to Spanish omelette mix, or fish pie.

Spread Philadelphia cheese on a bagel and add chopped peppers. Really delicious.

Make salsa.
Add to chilli
Add to a tray bake.
Add to sandwiches or wraps with houmous and grated carrot.
Chop and add to sausage casserole
Blitz like a red pesto

I often use them to make a soup along with grilled tomatoes, garlic, some kind of milk or other and the usual herbs and spices. Gorgeous, alternatively I sometimes use them on a grilled Panini

Shove them into leftover cooked rice along with olives, maybe jarred artichokes or fresh spinach, and some cubes of cheese. Shove in the microwave.

This is what I do:

Whole jar drained peppers in blender along with

Cubes of stale bread
Olive oil
Smoked paprika
Skinned toasted almonds
Sherry vinegar
Garlic
2 or 3 tomatoes
Tomato puree
Lemon juice
Salt and pepper
Flat leaf parsley

Makes the nicest Romesco sauce or dip. I have it with pasta, dip stuff in, have it as a spread in sandwiches and lasts for ages...

It's also nice with grilled chicken or salmon, roasted broccoli, anything really!

My recommendations would be ..

As part of a topping for bruschetta -
Toasted sourdough/ Crostini
Goats Cheese
Chopped Tomatoes
Fresh Basil/ rocket
Roasted peppers
Balsamic Vinegar

or

Chucked into some pasta along with red pesto or passata. Add in olives if there are any hanging around fridge.

The sauce with this is really nice. For the kebab you can just use koftas or meatballs or falafel and you can leave out the seaweed in the sauce and add a pinch of salt.

My favourite pasta sauce:
Jar of Grilled Peppers
Jar of Grilled baby Artichokes
Jar of Sundried or Sunblush Tomatoes
Jar of pitted Green Olives (any kind) - all chopped reserving some of the oil
Stir in to Al Dente Orzo pasta
Top with crumbled Feta.
Yum.
