What’s for dinner tonight?

I never really do the dinners as dh is normally in charge but he’s going to be out for a large part of the evening so it’s down to me. Obviously I can cook but rarely do and I don’t really have to think too much about cooking, I’m a consumer not a creator 😂
Last night we had lasagne and the night before we had a roast chicken. Wednesday ds has requested burgers and Thursday will probably be chilli and rice based on what’s in the fridge at the moment and everyone’s movements for the week.
I’ve got an hour to get to the shops and choose something, this will be much easier if I know what I’m going to cook! If it was just me I’d be having some toast but the dc will not want that 😂 need some inspiration.

We’re doing a new recipe from the Sainsburys magazine of red lentil & carrot soup with onion bhajia nuggets. Crusty bread and butter for anyone wanting a bit more with it.

Pork ragu with penne - not something I'd have chosen to make/eat, but I received a heavily discounted recipe box and this was one of the meals in it.

Peppers stuffed with cous cous with a quorn escalope (I'm trying to reduce how much meat I eat) and salad.

I'm bloody crap at thinking of meals.

peppers stuffed with veg mince from a sloppy joes recipe i have, tis delicious and easy. I cook the peppers cut in half in the microwave until they are soft then fry up onions garlic with the mince, add tsp of mustard powder, 3 tbsp of Worcestershire sauce 3 of red wine vinegar and 3 of tomato puree mix and stuff in peppers top with cheese and bake.

Chicken casserole, been in the slow cooker since this morning. With Lidl deluxe mash and broccoli. I bought mash, rather than doing my own, for the first time last week and I’m afraid it’s just amazing. I’m never making my own ever again.

Well thankfully dh called me earlier to say he was going to be home after all so he was picking stuff up for dinner! That’s me off the hook 😂
Some nice sounding dinners and I’ve requested toad in the hole for next week!
