What is your favourite salad recipe?

I'm 11 weeks pregnant and the nausea is finally subsiding but I've basically been existing off of crisps, chips and bread for the last 2 months 😳Now things are looking up I'm desperate to try and get some nutrients in and looking for some big salad inspiration. I eat pretty much everything but particularly love beetroot and fruity salads. Thanks in advance!

This Ottolenghi miso and peanut butter chickpea salad is delicious. I serve it with the chickpeas warm, as I like the temperature contrast.

Less filling as a main meal but Meera Sodha’s Burmese mango, peanut and lime salad is really fresh vibrant and well balanced.

Small tin of sweetcorn, diced vacuum pack beetroot, diced red/orange pepper, tin haricot/butter beans, blanched (frozen) greeen beans or peas, stoned olives, diced feta, red or spring onion, S +P, drizzle of oil & splash of vinegar from the olives.

Ooh we used to eat watermelon/feta quite a lot but haven't had that for ages and would never have thought to add peanuts. Will have to give it a try!

Chopped celery and bell pepper with drained tinned kidney/cannellini/butter beans or chickpeas (can mix and match), i add fresh mixed herbs if i have them, dried if not. Dressing - lemon juice, olive oil, vinegar, salt and pepper.

Add in what you like/have. Eg sliced radishes are good. Sometimes a drained tin of tuna. Cooked rice/pearl barley/couscous.

I do this with honey roast or walnuts. Lush.

I have so many that I love, it's hard to choose a couple!

But I'm extremely fond of remoulade. I vary the ingredients as I fancy.

Also any kind of chicory/apple/walnut/cheese or similar.

Here are a couple more that I really like:

Not really a salad as such, but I love cold cous cous with pomegranate seeds and feta. I use the Ainsley Harriet flavoured cous cous

Also spiralised courgette with lemon, mint, salt and chilli. Sometimes with goats cheese.

Asian slaw - Chinese leaves, edamame, peppers, mange tout and loads of radishes all shredded with coriander. Lime juice, soy, sesame ginger and chilli dressing. Yum. Nice with grilled chicken and rice noodles chucked in.

Shredded apple, celery and celeriac dressed with lemon, honey and mustard mayo and tonnes of parsley. Perfect with pork.

I bought a coleslaw mix so basically all shredded but no mayo and made a dressing with siracha and put nuts on it which was a bit like Asian slaw and very nice !

At this time of year, I love roasted squash/sweet potato, peppers and red onion, with spinach, chilli flakes and crumbled feta.

Add a fried egg and hot sauce if you would like to elevate to Massive Salad status.

Rocket and parmesan shavings with a dressing of honey, lemon and olive oil. Simple but delicious!

Love all kinds of salads, this is the thread for me! I had a gorgeous one last year, a Jamie Oliver one, www.jamieoliver.com/recipes/vegetables-recipes/tasty-tabbouleh-salad/
which I’ve tweaked and added halloumi and tomatoes to, used pine nuts instead of pistachio, all sorts of variations but it’s so nice.
Love a Greek salad and an easy one to bung together for taking to work. Also chicken, bacon and avocado with big ciabatta croutons. I need my salad to be a big substantial one and I vary them a lot to keep them interesting but the options are pretty much endless.

I'm on holiday right now (in Cancun, in case anyone is interested) and I just had the most delicious salad for lunch.
It was rocket and arugula with diced mango, strawberries, walnuts, driedbcranberries, pears and goats cheese with an amazing mango dressing.
It was divine
