If I land in Sydney airport at 7am will I be able to check in at a hotel there straight away?

Probably (I’ve done it elsewhere, not in Sydney). But you need to be totally clear with them about what you want, and they’ll charge you more than the standard rate for a night (lots of airport hotels have a day rate for people who want a bed whole transiting)
