Just me and two fairly unfussy primary aged kids tonight as DH is out. Want something quick and easy that isn't pizza! Any ideas very welcome!

You can omit the potatoes from the omelette if having chips or keep the potatoes and have garlic bread and or a salad to accompany.

For kids tonight, I'm making cheese and black bean taquitos (wraps with cheese and beans inside rolled up and baked). Dh and I are having cheese, black bean and veg enchiladas (basically the same with extra veg and a spicy red enchilada sauce). Both with creme fraiche and salad.

Some great ideas here that I'm noting down for future use! Going with the frittata idea with some salad. Even they both drown frittata in ketchup at least it's quick, tasty and healthy with hidden veg in! Weirdly mine love broccoli in quiche/frittata so win win.
