Fitbit Scales, can the owner see your weight?

We have some but they're linked to dp's Fitbit. I'm trying to lose some weight but ordered my own scales.

He said I should have used his. Would he see my weight in his app though??

I would have tried downloading Fitbit scales app, setting up your own account and registering the scales on your phone first to see if you could use them independently.
My scales of a different brand can be set up with multiple “owners” so no one sees other peoples data.

I don't think so. On mine the weight only syncs to the app when you have the app open and in range of the scales.
