New Year, new dinners

I'll start with I'm disabled and have been living on microwave meals and take outs, both of which are costly and not enjoyable

I want to start cooking simple meals from scratch, things that are virtually one pot slowcooker meals or can be prepared the night before. I cannot stand for more than a few minutes so making sauces etc that need stirring are out

I'm struggling for ideas beyond jacket spuds, spag bol, sausages & mash. Nothing highly spiced/curries but chilli con carne is fine

Help me menu plan about 21 evening meals please as I'm stuck in a rut. Tried to find old threads but didn't find one, I know there are loads out there

Beef casserole in the slow cooker. Stick the raw beef, big chunks of carrot etc in the slow cooker with one of those Coleman packets you mix with water. Stick it on for 4hrs high or 8 hours low. No need to cook any additional veggies as it has them in it. You could do some potatoes on the side or for even less standing about just have with some bread.

Cherry toms
olive oil
salt
pepper
boursin cheese

oven for 40 mins at 180 degrees

pasta

mix it all up delicious

tin of corned beef
gravy granules

slow cooker 6 hours
