Cooking - where did I go wrong?

Just made some ricotta and spinach muffins. Was substituted ricotta for brie for Xmas shop so had to do something with the ricotta and couldn't face anymore pasta.

Used plain flour with baking powder and bicarb, milk, ricotta, bit of cheddar cheese, eggs, black pepper - no salt, and spinach.

They came out the oven looking nice but they taste disgusting. Sorted of tangy and salty but not in a pleasant way. My taste is a bit off due to cold so had husband to try and he said the same.

Where did I go wrong? How could I take those ingredients and mess it up? 🤔

My guess is it was the bicarb. That has a horrible taste. How much was in the recipe?

Hmm, I went rogue so that might fit. Live and learn - go easy on the bicarb. Gutted, they look nice.

It'll be the bicarb, you really have to stick to recipe measurements with that one.

All in the food recycling - too gross even for me to eat. Will follow proper recipe next time.

Definitely too much baking powder/bicarb. It's an easy way to ruin bakes as just a little too much is too much!
