Digital camera recommendations

DC is going skiing in a few weeks with school and we promised we’d get a digital camera to take some nice photos but don’t have a clue what we’re looking for.
will probably end up looking for something secondhand as budget is under £100 but some ideas about what brands/specs to look for would be great

Cameras at that budget will be easily outclassed by a smart phone. If using their phone isn't an option, you might be able to get a second hand RX100 for near £100.

I would definitely go second-hand with a budget of sub-£100. Is she looking to take videos or just still photos? If this is to capture 'holiday pictures' and landscapes, I would suggest a lens that will zoom in from wide-angle . If she doesn't mind about bulk, a bridge camera would be the most versatile - DH recently got a Panasonic Lumix secondhand for £80 and he's really pleased with it.

I would try any local independent camera shops; also CEX are very good and include a warranty - I got a 'compact system' (interchangeable lens) Samsung NX from CEX for £120, but your DD might not want the faff of interchangeable lenses on holiday.

This is what my DH has:

If you want a pocket camera, the Canon IXUS range is supposed to be good, but again you'd have to go second hand to come in at your budget.

Phone camera isn’t great tbh (iPhone but an older model - 6 I think)
Due an upgrade but don’t really want her taking a brand new phone away.
will look at the ones suggested so far thank you so much

iPhone 6 is 12mp - (rear camera) which is adequate but it's terrible in low-light and the selfie-camera is much lower-resolution. Samsung phones have good cameras even at the cheaper end, so another option would be to get her a budget Samsung - I think they start at around £130 new - that she could use just for the holiday and then you can upgrade her I-phone at your leisure.
