Left over beef ideas

I cooked a joint Xmas Eve and there's loads left. Seems only I really like beef here on Xmas day.
What can I make with the rest of it. I had a sandwich last night so I'm over that.

Shred it and make tacos/ wraps or a Chinese dish like chow mein
or egg & beef fried rice

Make a bourguignonne sauce, put the diced left over roast beef in the sauce voila beef bourguignonne

Make gravy using Makesons stout or Guinness, add the cooked diced left over roast beef, you've got beef in beer.

Put a pastry 'lid' on it and make it a pie.

Make a chilli sauce i.e. onion, garlic, chilli, chopped tomatoes, tomato puree, kidney beans, small amount of liquid stock made from stock cubes, add the diced beef = chunky chilli con carne

Sliced thinly with chunky triple dried homemade chips (only works if you have a chip pan or deep fat fryer oven chips aren’t the same )
cornichons, cherry tomatoes and red onion finely sliced mixed up with pickled red cabbage. Season with salt pepper and white wine vinegar. A dollop of that and some fresh buttered baguette.

si simple but tastes wonderful.

Chop into thin slivers, make an Asian style broth soup with stock or stock powder, noodles and vegetables such as broccoli, peppers, mushrooms flavoured with soy or five spice or sweet chilli sauce. Add meat towards the end of cooking.

A similar idea is a stir fry.

Cornish pasties made with shortcrust pastry with diced beef, gravy carrots celery peas will feed the hungry hoards.

Warming it up in broth is a great tip. Stops that hard feeling.

Fajitas - make the veg and spice as normal and throw in the warmed beef at the end.

Stronganoff - warm and add to brandy and cream or as I do, balsamic vinegar and Greek yoghurt. Paprika is a must in both versions.

Casserole - layer up with baked beans and gravy. Can put cold potatoes over the top.
And stir in cooked carrots. Microwave from frozen.

Noodles - warm beef in stock, toss in noodles with veggies and your favourite sauce.

Lots of great ideas thank you.
The thought of cutting it up is putting me right off but it was a decent sized joint so there's probably still about £20 of it left so I'll have to pull my finger out
