Frying Beef

Whenever I fry strips of beef for example stir fries more often than not it comes out as tough as old boots regardless of what I try to do and it's like chewing rubber.

Anyone got any suggestions how I can achieve nice tender beef ? Thanks

Buy rump steak rather than generic strips ; it that’s too expensive then tenderise the steak by beating it with a tenderising hammer or a rolling pin;
ensure the pan is piping hot and fry the steak strips quickly; do not allow them to boil in liquid.

Not all meat frys, some takes long slow cooking. Good meat quickly fried over a high heat should be fine.

I usually buy the thin cut strips from Asda for stir fries etc but it never fries nice ?

I would buy a sirloin steak and cut into strips , make sure fry on really high heat .

Going against the grain here but I gently cook it. I know a lot of people flash-fry it on a very high heat but gently fried on a lower heat for longer makes it softer, I think. My cooking has massively improved since the days when I automatically used the biggest ring on the highest, most ferocious heat for absolutely everything!

I’ve never had that frying steak turn out anything but tough. Get a normal cut of steak, pan fry it, let rest and slice to add to stir fry at the very last moment. Or use chicken or prawns instead as these tend to be more forgiving.
