Family Meals this week running to Christmas?

I want to meal plan with lighter meals this week in the run up to Christmas.

Lunch each day will be freezer surprise, but I would love some meal ideas. One of us is a vegetarian and has stomach issues which means he eats very lightly (DH). DS1 is super fussy and has sensory issues around food so I will need to be fairly plain for him (which can be adapted from whatever else we eat) and DS 2 and I eat everything. I am thinking along the lines of a cream of carrot soup tonight with bread, cheese and fruit, that sort of thing.

I'd love to know what other people are planning so I can get some ideas!

I have lined up
pea and ham soup, made with the ham stock.
Leek and potato soup
Tomato soup
Each with fresh rolls, ciabatta or garlic bread.

A take away on the day I'm doing a lot of driving.

We are eating very simply and cheaply this week to both save money, fridge/freezer space and our stomachs! We're also all a bit under the weather so trying to stay well for Christmas festivities.

Soup with nice bread.
Jacket potatoes with tuna.
Egg on toast.
Tomatoes on toast.
Pasta and pesto.

Lots of fruit salads/smoothies.

Soups, eggs on toast etc really fit the bill for me I think. Plus alot of fruit. Light eating and drinking.

I made pea and ham soup last night so thanks for the inspiration! Had forgotten I had cooked ham in the freezer.

Tonight my older one has a counselling session and we usually do pizza afterwards so that is sorted but I think poached eggs for me (I dislike pizza!)

I wish any of mine would eat pasta and pesto. That is one of my favourites.

What about pasta with a different easy sauce? Maybe garlic paste, peas and butter/olive oil? Cheese?

Boursin makes a very fast pasta meal, with cherry tomatoes or whatever works in your family.
