Just popping on to spread the word about my lazy dinner.

Seriously couldn't be bothered cooking tonight, I was rooting through the.cupboards trying to find something that could be bunged in the oven and nada. Not so much as.a curly fry.

I did however have leftovers from yesterday's roast dinner, not enough for 3 of us, a bit of pork, about 6 roast potatoes, some gravy a couple of yorkshire puddings and some stuffing. Managed to resist making bubble and squeak for one and handing dp a takeaway menu when he got in and instead I chopped and fried an onion, added the pork, potatoes and stuffing. Let that fry off then added the gravy, let that simmer whilst I stuck some black pudding and the Yorkshire puddings in the oven with some part baked baguettes

Stuck the contents of the pan in the baguette, along with the Yorkshire puds and black pudding. Added apple sauce and brie, stuck a salad on to healtherise things a little and now I'm basking in my own culinary skills whilst dp gazes at me with adoration I haven't seen since I gave birth to my first born. 😅

Oh and I separated some of the gravy off to make a gravy dip. That definitely pushed things up a tier.

My first thought when you said roast leftovers was roast toastie! So what you ended up with was pretty similar. Enjoy!

I also do this. Make a creamy mustard sauce for it to be mixed in and whack some jus-roll on top for a leftovers pie

Stealing, I usually make a leftovers pie but with a cheesey sauce. Alas there wasn't any pie making stuff in, partly because I'm skint and partly because I'm trying to empty the cupboards for Christmas 🤣🤣🤣

MissMogwai, that sounds like the dinner of champions. If I lived alone I'd live off satsumas, crisps and toast dripping in butter.

wow, my lazy dinner is usually toast! That sounds epic but not at all lazy; you had to stand over a frying onion for one! And chop a salad?! Plenty of effort there.

I discovered a pretty lazy way to cook pork the other day. V generous layer of apple sauce in a baking dish, pork chops on top with herbs of choice, layer of stuffing, layer of thick gravy. Stick it in the oven for 50mins. It saves on faff with gravy and stuffing and sauces later on.
