Cornwall or Isle of Wight are great for toddlers - plenty of beaches plus lots of other attractions.

Somewhere child friendly with a pool, beach, child-friendly things to do.

I would have hated taking a toddler to southern Europe, too hot I think. They want to move, not sit in the shade.
