Boxing Day dinner ideas?

So have my DM coming round for Boxing Day, and want to make a nice dinner for her.

I will be making a small turkey crown on Christmas Day, so unlikely to have leftovers.

Any suggestions?

What does she like?
is she expecting a Christmas type meal or any type of dinner?

We have gammon boxing day with roast potatoes and whatever veg I fancy.

Not sure how adventurous she is but for our guests on Boxing Day I’m doing homemade crab cakes with a sweet chilli sauce followed by a fish curry. I know I’ll be sick of turkey and roast dinners by then so wanted something totally different.

I love roast duck and it’s quite luxurious

or salmon is lovely with veg and garlic potatoes

I like the idea of gammon, I’m thinking it’s between that or roast beef 🤔

I have a similar dilemma... exept MIL is a very fussy eater!
We just do a Chicken & bacon pie new potatoes with garlic, beans... and maybe a soup as starter.

We do gammon in coke, with the leftover potatoes and veg done as a bubble and squeak bake (I do extra on purpose). I actually prefer it to the turkey dinner!

My MIL is coming boxing day, we're doing roast lamb, as my children have requested it.

Ohhh Gammon with warm potato salad, green beans and crusty bread would be delightful

I prefer it to Christmas Dinner.

Our Boxing Day dinner is as prescriptive as Christmas Day in our family! Glazed Gammon, leftover turkey, mashed potato, salad and lots of pickles. Can't wait! Then onto the epic Christmas sandwiches with the leftover gammon, turkey, stuffing, bread sauce, pickled red cabbage ...
