Half a roast chicken- what would you make for dinner?

I used half a roast chicken in a pasta dish last night. Any quick easy ideas welcomed please- two adults two hungry under 5s

Stir-fry with noodles.

Peppers, roughly chopped onion, garlic, two diced carrots, grated fresh ginger if you have it and frozen peas. Noodles or rice.

Once you have stripped the chicken and done the prep the dish is a work of minutes.

Cook some mushrooms
Make a white sauce, seasoned with black pepper/ herbs
Add chopped up chicken and mushrooms to white sauce
Add 2 dessert spoons cream cheese
Serve with rice

Quick, easy and tasty.

Quesadillas or curry are my go-to leftover dinners. Easy to bulk out with other stuff if you don't have quite enough chicken left.

Braised lettuce and peas (with chicken)

I make the above but add the chicken in to warm through (either shredded or cut into nice big slices). We have it served over rice or boiled potatoes. Crusty rolls are nice with it if you have any.

I have roast chicken to use up tonight. I'm going to add it to a jar of butter chicken sauce. Serve it with rice & nann. I'll make mine in to a nann wrap with lettuce, red onions & minty yogurt.

Cut chicken into bite-sized bits.
Gently warm a tub of creme fraiche with seasoning and a dollop of grainy mustard.
Add chicken, stir through until thoroughly hot. Can add mushrooms/bacon/veg if you like.
Serve over rice or jacket spuds

A stir fry definitely makes it go a long way. I love the Aldi pad thai meal kit (I alter it to be a stir fry with veg and chicken), it’s ample for two adults and a lunch portion, so may work for you, or bulk up with some diced veg, mushrooms and peas, a bit of gravy, cook some ready made flaky pastry on a baking sheet with a ready sized piece for each person for topping as an individual pie.

or with Chips and salad, and a bit of garlic Mayo for dipping chips in.

Chicken pie.

Use a ready made sheet of pastry. Fry some copped onion, add peas (any extra veg too), add chicken chunks, water, stock cube/gravy granules. Leave to cool....Put pastry on a baking tray, put filling on one half, fold it over and seal, like a big pasty... egg, or milk, wash the top, bake for 40 min at 180 fan.

Asian style chicken noodle soup. Use chicken stock or stock cube, diced chicken, noodles, veg such as mushrooms, peas, broccoli, sweetcorn, left over salad leave etc etc. Season with sweet chilli sauce or soy sauce etc. Very quick and tasty.

Chicken and mushroom risotto is always a hit here, add any left over veg.
