I love risotto but sometimes find it can be a bit bland. What would give it a good flavour boost? TIA

I soak some dried porcini mushrooms in hot but not boiling water for a couple of hours and use the liquid as stock, add white wine and a splash of white wine vinegar.

Strong white pepper, decent stock, frsh garlic, good flavorful lean protein like duck, prawns or gammon. I find spring onions give it a nice kick, and as a previous poster mentioned, good mushrooms. Lots of onion to start and parmagiana reggiano to sprinkle at the end.

Even a bit of onion flakes/onion salt of you like stronger.

Really good stock. My fave is 2-3 punnets baby plum tomatoes roasted & I do it in the instantpot, (in 10 minutes), it's lush.

Or bacon & pea. Mean meaning to try chorizo & chilli

Tons of garlic, splash white wine 🍷, whatever is in it a good squeeze of lemon 🍋 at the end and plenty of parmesan

Make sure you are seasoning really well; rice is bland and needs a lot of seasoning to bring out its flavour.

More cheese! The risottos that go down well with my family all have a shedload of cheese in - eg leek and goats cheese. Toasted pine nuts are good too. Or bacon bits.

Using leftover stew is a really good idea - do you just stir it in at the end?

Love risotto! I add red onion, loads of black pepper, bacon/pancetta, grated parmesan. Anything and everything really. I stopped adding wine since my 18 month old now eats it with me!

I fry up onions and a lot of garlic in butter for a minute, add the risotto rice and get all the rice coated. Then add chicken and stock and keep and eye on it, stirring here and there. Keep adding more stock as it absorbs. I listen to a podcast or watch something in the kitchen so that I'm around to keep stirring it regularly.

I don't use wine, just stock.

At the very end I'll throw in some spinach or kale. I serve it up with a lot of black pepper and absolutely drown it in lemon.

Another flavourful risotto is to do the same but instead of chicken I cook smoked haddock in butter in the oven wrapped up in tin foil. When the risotto is done, flake the haddock and mix it in, adding in the lovely smokey butter. Serve it with something green: asparagus or broccoli etc.

Use a bone broth as a stock, I love this chicken broth. But the Beef is great too.
