Tell me what to cook for dinner

Defrosted some chicken breasts with the intention of making fajitas this evening. DH is unexpectedly working late and so won’t be home for another hour or so.

Don’t really fancy making fajitas anymore. I’ve been up since 3am with a teething toddler (who is still awake and needs coaxing to bed before I can cook anyway) and all I want to do is order a takeaway and watch some tv but the chicken needs to be cooked now that it is defrosted.

My mind is blank…

Put the chicken in slow cooker with some sort of sauce

Get pizza

Place on chopping board & bash chicken breasts with bottom of pan to flatten & tenderise. ( while thinking about how annoying cooking is)
Slice into whatever preferred size
warm olive oil in pan
sprinkle garlic salt or favourite seasoning
fry

Shred & serve with cooked pasta & jar of pasta sauce, cheese
shred & make chicken cheese toasties
or just serve with favourite veggies

I agree that with a long day with toddler you should have a night off

  • eat toasties & put music on & dance with toddler then have a bath together & snuggle up for stories

Thanks all. I think the general consensus is a take away…toddler is now asleep and DH should be home soon.

@Purplehonesty2 slow cooker idea is great, thank you. Will do that while waiting for DH & takeaway!

Agree with the takeaway suggestions.

My favourite chicken thing right now is to stick then in the oven as is. Chop a carrot, a leek, sautée with some garlic in a pan. Add a cup of chicken stock, some mustard, a glob of cream cheese and some frozen peas. Once the chicken is done shred it and add that. Eat it with potatoes.
