I make Jack Munro's vegan nut roast, have done for several years. I make it well in advance and freeze it. And then lots of different roast veg - beetroot, fennel, onions - as well as the traditional spuds, parsnips and carrots.

We usually have Rose Elliot's celebration roast, marmite roast potatoes, red cabbage with cranberries, sprouts, sometimes another veg. Onion gravy.

Vegan nut roast type thing and not pigs in blankets from M&S or Waitrose I think. DH cooks Christmas dinner though as he and the kids are meat eaters and I won't cook anything too animally looking.

Thanks for all your suggestions everyone, though the suggestion for potatoes three ways did seem a little... limited; much as I love potatoes!

I'm loving the suggestion of haggis and also the red cabbage. That will look lovely and colorful on the Christmas table 🙂

Lol! I was only referring to the potato element of the meal OP! Trust me, the rest of the plate will be overflowing with veegy delights!!
