When do you carve your pumpkins, to keep fresh for Halloween?

On Halloween, otherwise they end up stinking.

A couple of days beforehand - so probably on Saturday or Sunday. I find they go slightly slimy if done too far I'm advance as they stay 'healthy' as whole pumpkins for ages!

We went picking today so have them all ready!
