I need some help with my diet, please!

I’ve got into a place where eating is a bit by the by for me and I’d just as soon not bother to do it at all. I only ever rarely feel hungry and sometimes will make something and then a mouthful in I find I am unable to eat it.
Typically a day for me would be -
Nothing to eat until 5pm ish and then I would have a bag of crisps, maybe a slice of toast and then I may have a snack of a couple of biscuits in the evening. Sometimes I will have a bag of crisps in the day too.
Probably once a week I will eat a proper meal, such as a jacket potato and cheese, omelette or pasta. Maybe twice a week on a good week.

I am very tired all the time and I have been anaemic previously.
My BMI sits around 18, so I’m only slightly underweight but I am aware I look quite thin and probably ill a lot of the time.
I’ve got in such a pattern where I don’t even know what normal eating looks like and rarely ever even consider food.
I would like to do better as I know I am setting a poor example to my dc and at some point my lack of nutrients is bound to catch up with me.
Any suggestions as to where to start?

Firstly aside from calories, you are way lacking in nutrients of vitamins and minerals, are you taking any supplements?

You need 0.8g of protein for every kg you weigh so for you think 1 chicken breast/salmon
fillet/small steak etc. per day

Given you eat a small amount I would have something like this to include protein, carbs, calcium and veg/fruit each day

Breakfast
Greek yoghurt with berries/fruit
Porridge with banana
1 x brown toast with peanut butter/banana

Lunch or brunch if you only have 2 meals
Eggs of some kind
Avocado with salad
Cottage cheese/ham/salad
Veg soup
Maybe with crackers or toast

Dinner
Grilled chicken/salmon with steam veg/salad
Noodle soup with prawns/veg
Maybe with brown rice
Pasta - but you need something more than just carbs with it
