I would definitely still eat that at least 2-3 years after the BBE, possibly more depending on how desperate I was!

It will be fine. Best before is about food quality. I think WRAP guidelines would likely suggest that would be safe to eat three years after the best before date. If it looks and smells okay you're good to go.
It's "use by' that you need to be careful with. That refers to food safety.

If it's within a couple of months I would eat it.

The best before date is usually about 2/3 years when you buy it. A couple of extra months wouldn't bother me.
