Kids had filled pasta with pesto, peas and fried pepper. Probably about £5-6 for three of them. They had greek yog (huge tub from aldi) and some honey for a pudding.
DH and I had a sort of kedgeree of rice, stock, hot smoked salmon fillets, fried onion and hard-boiled eggs. There's loads left for tomorrow. I think it probably cost around £5 for four portions. I do a lot of shopping in Aldi and Iceland, and hunt for bargains for the freezer.
Tomorrow, it's JPs, chipolatas and veg.

AllBlocChain · 19/10/2022 22:39

I made chicken pie.
Half a pack of high welfare chicken thighs: £2.64

Frozen soffrito mix: 50p
Leftover creme fraiche: 50p
Butter: £1.25
Flour: 20p
Wild mushrooms: £1.30
Rosemary: free
Chips: 50p
Frozen peas: 20p

£7 something for a family of 4 I guess? It was lovely!

bluechameleon · 19/10/2022 22:56

Pasta 80p for 500g, had about half. Sauce had an aubergine, courgette, carrot, onion, pepper, tomatoes plus some herbs, garlic etc. Maybe about £2.50? Garlic bread 90p. 1 free range chicken breast £2.20. 1/2 of a block of fake Halloumi 90p. Grated cheddar - maybe 50p. £7.80 altogether, but there was one portion of sauce leftover. Just under £2 a person.

RitzyTitzy · 19/10/2022 22:56

Small pork belly joint sliced into chops_ £4.20 from asda
2 packs of flat breads - £4
Home made tzatziki from left over yoghurt, mayonnaise, garlic, cucumber - maybe £2 all in?

Total £10.20/ £2.55 a head

MummyInTheNecropolis · 19/10/2022 23:02

Spaghetti bolognese, had it last night as well and will probably have again tomorrow.

250g beef mince £2
mushrooms 50p
peppers - 70p
onion - 20p ?
passata - 40p
garlic - 20p ?
dried herbs - 20p
spaghetti - 90p

£5.10 for 4 portions so about £1.30 each then another 40p maybe for the cheddar I had grated on top, so £1.70 in total per meal.

stephaniestephanie · 19/10/2022 23:11

Small piece of smoked gammon £3.50
Colcannon (well it is nearly Halloween)
Potatoes 50p
Carrots 20 p
Onions 10p
Parsnips 30p
Cabbage 30p
Crème fraiche 50p
Butter 50p

Veg boiled and then mashed with the dairy.

£5.90 for the lot. After dh and I had eaten the Gammon is almost gone but enough for a sandwich for lunch. Lots of colcannon left for another meal. I love leftovers - easy dinner tomorrow. If I lived in my own I would be happy with a bowl of the colcannon, the meat is to keep dh happy with my Irish cuisine. Confused

WombatChocolate · 20/10/2022 11:30

Tonight’s dinner is Peanut Chicken. This serves 8, so will feed our family twice.

  • 700g chicken breast - £4.75
  • carrots, red pepper, leeks, garlic, mushrooms - £1.50
  • 1/2 jar value peanut butter crunchy - 50p
  • 1/3 jar value honey - 35p
  • stock cube and scoop coarse grain mustard - 20p
  • rice - 70p
Total for 8 portions is £8, so £1 per portion. Might put 2nd portion in fridge and eat at weekend or feeeze it for sometime when we are busy.

Another one I do is sausage casserole. I make enough for 12 portions and freeze 2/3 of it.

  • 24 best quality supermarket sausages bought on offer - £9
  • carrots, peppers, mushrooms, leek, garlic - £2
  • 2x passata cartons - 80p
  • herbs and black pepper
  • 12 x baked potatoes (3 bags with 4 in each) - £1.20

Total for 12 meals = £13. About £1.10 per meal. Obv the baked potatoes aren’t frozen for meals in future. We eat 4 portions the night sits cooked and then I freeze a 4 portion pot and 2x2 portion pots for further use.

BuryingAcorns · 20/10/2022 11:42

I made a chilli yesterday:
£3.50 for lean mince - Waitrose
£1.58 2 x tins of kidney beans - 79p each Londis (I need to get mine from Aldi, clearly!)
£1 - chestnut mushrooms - Co-op
£1 - re & yellow peppers (2 out of 3 for £1.50)
15p - a red onion - Co-op
70p - passata jar - Sainsbury
10p - celery stick
10p - carrot
50p - splash of wine from DH's red wine
10p - square of dark chocolate
70p (guess) - spoonfuls of herbs, spices, garlic puree, bouillon powder
About 50p for some rice

That's just under £10 but it served 3 people yesterday (technically 4 as DH had been doing manual work all day and had an entire portion as seconds) and there's plenty left over for 2 people to have for lunch today - so about £2 per person.

WombatChocolate · 23/10/2022 16:18

Tomorrow I will make beef tacos.

  • lean beef mince - £3.50
  • taco kit - 12 tacos and mince seasoning and salsa - £2
  • sour cream - 75p
  • - cheddar cheese for topping - 40p
  • Mushrooms and a red pepper - £1
  • rice - 40p
Total is just over £8 and serves 6 - £1.40 per serving. We would probably also have some carrot sticks and cherry tomatoes on the side as v limited veg meal otherwise.
Isseywith3witchycats · 23/10/2022 16:25

Thesearmsofmine · 23/10/2022 16:28

We’re having enchiladas tonight.
The chicken breast was a super cheap buy in Aldi as I unknowingly went in when they were reducing stuff to 75% off so it was about 65p for the pack. Enchilada kit was £2.50, onions and peppers about £1, probably another £1 worth of cheese and £1.50 for corn on the cobs on the side. So £6.65 to feed 5 of us £1.33 per person.

LadyHelenaJustina · 23/10/2022 16:51

lamb kebabs today.

2 lamb steaks from Aldi £4.75 sliced very thinly.
pack of wraps £1.25
homemade coleslaw 3 carrots, 1 onion, 1/4 red cabbage, squirt of mayo, 2 tsp mint sauce 80p
1/2 pack of cherry toms 45p
1/2 cucumber 35p
1 lettuce. 50p
dribble of homemade hot chilli sauce.

2 adults and 3 teenagers. £8.10 total, though disguises the fact that you would need to buy whole packs/ jars, not just what I’ve used.

Hooverphobe · 23/10/2022 16:59

3lb cod (free - kids caught them)
onion - 10p
parmesan - 30p
oregano - 5p

served with potato cakes:
2 grated baking potatoes - 25p
1 onion - 10p
2 green chillis - 20p

salt and pepper to taste

total cost = £1 for 6 meals plus £100 to turn the oven on.

lannistunut · 23/10/2022 18:11

Last night we had a veg curry, dahl and rice. The veg curry was about £2, the dahl about 70p and the rice about 40p so £3.10 for three people.
