Bargain chicken breasts from co op. I’m beginning to grow feathers, pleas has anyone got quick and easy ideas?
kids like enchiladas and ..dunno, minds a total blank.

My stand by with chicken is peanut butter mixed with soya sauce, honey, curry and add some water to make a sauce. Add to cooked chicken, heat through and serve with rice.

Might be too late but I just did chicken mushroom and brocoli pasta bake with soft cheese, cream and garlic and a chicken stock cube.
Then baked in the oven with cheese on top. You can always chuck in fridge veg as well its pretty forgiving but very tasty.

Ooooh thank you! They are all very tasty sounding, I’ll work my way through them this week. I ended up chucking teriyaki sauce on ours ( again!) which was ok. Though mind numbing Ly dull!
pretty sure we’ll have chicken again very soon, and am definitely going to cook the above. actually does anyone eat anything that isn’t chicken? I’m so cooked out, even cook books just seem like blah.😳😀

dd found a Korean fried chicken recipe on bbc which everyone loves, I made masses so they have it in sandwiches next day!

I like flattened chicken breast, its easier to keep moist. Sometimes have it plain with a homemade tomato salsa and sour cream and chips. Or, with a seasoning mix and sides to match the theme.

Ooh yum! You should write a cook book!
I like paneer, and I love tempeh ( forgot about it!) I never seem to cook tofu ( or aubergine or Indian) without making it yuk.
That’s a good idea, we definitely need more veg and less chicken.

we tried Korean chicken sauce on cauliflower and mushrooms it’s equally yum.

actually I seem to remember satay made with cubes of squished rice is good too.

I do coated chicken thigh, drumsticks or use slices of breast. Like a faux KFC.

In a bowl, mix (about 1 cup) golden crumbs
1/2-1 teaspoon of paprika, garlic powder, onion powder, pepper, celery salt and italian herbs

Just press the chicken into the above- no need for flour or egg and bake till golden. It could be fried also.

Chicken in mushroom sauce with rice and broccoli. We are lazy buggers so we just use Chicken Tonight sauce but if you want to be a proper mumsnetter you could do a roux and fry some fancy wild mushrooms, shallots, truffle oil and other faffy nonsense.

A jar is good enough for us and tastes lovely, no need to overcomplicate things IMO.

marmite that looks very easy and yum! So does buffalo pasts, I like a 20 minute recipe!
zippalippa I was just planting my wild mushroom seeds, organic of course, when I read this, it did make me laugh!

i found lidl cream cheese, garlic powder ( I’m getting lazier!) and a drop of milk makes a good creamy sauce. If that’s helpful to anyone!

Hello! Made a nice sauce tonight, based on what you’ve all suggested- fried onions mushrooms garlic ( powder, so lazy) take off heat and sprinkle on a tbs of flour, stock cube melted in a drop of hot water, milk and keep stirring while on a low heat until it thickens. Chuck on cooked pasta with corn, chicke, ham , whatever, and some cheese, top with slice bread sprinkled with olive oil ( cba breadcrumbs!) and warm through in oven . Well family liked! Phew.

I do chicken thighs in oven when mostly cooked add garlic, frozen spinach, made up stock cube and two tins of canellini beans, thicken with cornflour if needed

We make Jamie Oliver’s Baked rice with chicken and chorizo - a little bit of chorizo goes a long way in this, or you could leave it out - you get a lovely, smoky bbq taste from the smoked paprika.

I did a kind of casserole thing today. Browned chicken in a big pan, added chopped celery, leek, and garlic and cooked down a bit, and then half a bag of pre-cut “soup mix” veg, a glug of white wine, some sage and a bit of chicken stock. It then simmered away for a bit before serving with mashed potatoes. It’s really stormy here today so it was perfect!

Slice breast length ways to make two flat sides (butterfly?), dip in beaten egg then panko breadcrumbs, fry in lots of oil. Serve with noodles and crudités. Or cut small and fry, cover in pesto before serving with rice and veg. Or just open a jar of Loyd Grosman curry sauce!

I chucked mine in one of those garlic spice mixes that comes with a bag for the oven. Once cooked, I emptied it into a pan added double cream and some parmesan. Served with veg and mash.
Also, my kids love the Nando's spice mixes you can buy. With skin on fries, corn on the cob and grilled halloumi.
We also have curries, stir fries, hunter's, satay, and chicken and bacon pasta.
We also eat a lot of chicken!

Sorry I can only find this online on Pinterest but absolutely delicious. Chicken with camargue rice, leeks and bacon. Ridiculously easy to do.
