We're debating whether it'd be full fat milk, or cream...or what?

Quora suggests dairy products are fairly interchangeable, is that right?

I normally use single cream.

Single cream.
OR half single/double cream half full fat milk.

The fat content of half and half is 10% - 18%. Single cream is 18%.

If you want 100ml of half and half- 10% fat

Mix 50ml of single cream @18% fat and 50ml of full fat milk @4% fat.

It literally is half and half single cream and full fat milk.
