A baking(ish) question about sugar or is it fake sugar?

There is a product which is used on a lot of baking shows to create sculptures, it resembles sugar but I'm not sure if it's actually real sugar or a sugar substitute. We are having a chat about it at work and I think it begins with an I, one of the guys thinks it's a French word and another just says it's called sugar glass.

There's definitely a word I've heard to describe this and I'm almost sure it begins with an I, I've tried google with no luck. What am I thinking of?
