Lunch inspiration

Please help me think of filling and relatively healthy lunch ideas!

I’m officially a home from this month so in theory this should make lunches lots easier but I’m eating crap and need to make some changes

all ideas welcome!

I tend to make 2 a week at this time of year. My favourites are minestrone, brocoli and blue cheese or spicy lentil.

Mixed bean salad with every raw veg going, topped with mixed seeds and nuts.

I make up a giant bowl and it sees me through about three to four lunches.

I just cook enough for dinner that I then eat for lunch the next day. Today I ate last night's dinner and I'm going into the office tomorrow so taking tonight's dinner. I like the Green Roasting Tin book for vegetarian food and you can do a couple of days food at the same time (which is what I did Monday night). I sometimes add veg sausages, eggs, bread etc.

I also like rice bowls - microwave rice, chuck in whatever is in the cupboard. Nuts, seeds, eggs, veg, salad stuff, make a quick dressing.

I like breakfast for lunch. More eggs! Beans on toast.

Yogurt and fruit sometimes.

Lots of salads. Lentils.

Anything! I try not to separate foods into breakfast or lunch or dinner - you can eat whatever you want whenever you want.

I’ve been at home with the kids for 12 years. There is nothing as hard as knowing you could eat 3 packets of crisps for lunch and nobody would judge you…

I’ve been having falafel (shop bought, not home made) either with half a packet of coriander and lemon couscous or in a wrap with humous, lettuce and chopped red peppers.
I also like Mediterranean vegetable flavoured couscous with crumbled feta, cherry tomatoes and cucumber.
