I think you've asked that before SP! It's an example of Cockney rhyming slang: Syrup of Fig (or Syrup in short) = Wig. Similarly, Apples & Pears = Stairs; Frog & Toad = Road; Plates of Meat = Feet - and so on. There's dozens of them!
