Over the last 6 years I've built up an epic collection of pulses but not all of the family are keen. More in principle than reality IMO.

So hoping for a thread with loads of amazing recipes so I can change the perception.

I'm in france so have a mixture from here and the UK.

I have:
Pinto
Black
Mung
Chana dal
Mung dal yellow
Green mung beans
Haricots blanc
Green split peas (lots)
Flageolants very
Coco blancs
Lingots
Lentils of all colours but masses of red ones.

Also anyone know what this is. Left by a vegan friend.

Pinto - jerk chicken with savoury rice and beans
Black - huevos rancheros
Mung- add to a stir fry or coconut curry
Chana dal - mix with black beans to make burgers
Mung dal yellow - dahl curry but add eggs if you are not vegan
Green mung beans - salad with onions and mint
Haricots blanc - cook in a morrocan inspired tagine type thing
Green split peas (lots) - pea and ham soup
Flageolants very - braised lamb with beans
Coco blancs - tomato and runner bean stew
Lingots - sausage cassoulet
Lentils of all colours but masses of red ones. - soup, add to mince dishes, dahl or other curry.

This was so simple I thought it would be dull but it was absolutely delicious. I stirred in a good sized slice of butter at the end.

I need to know what your vegan friend left. I'm very curious and somewhat nosey.

Lentils are great in dal www.paintthekitchenred.com/ethiopian-lentils-instant-pot-misir-wot/#ingredients just serve with lamb curry.

Some of your pulses are pretty old now so may take a bit longer to cook. A pressure cooker or instant pot could be a good investment. If cooking something like lamb and bean curry, boil the beans for five mins before adding to the dish and then cooking for ages.

My lot love homemade baked beans. Boil beans until nearly done, add to tomato sauce and bung in oven for half an hour.

Cassoulet has a myriad of variations, google is your friend here.

Make your own 'baked' beans with the haricots. Really easy and very tasty.
