Finding witness to sign deeds - frustrating

I'm remortgaging my house and need to get the deeds witnessed e.g. someone needs to see me sign them and then sign to say they witnessed this. I took them to work yesterday and got my boss to do it but then later on it transpired that some of the wording was wrong so I had to get another document sent over. My husband also needs to sign it.

He's from overseas so knows nobody here. Usually I'd ask my best friend to help but she suffered a recent bereavement so I don't want to bother her. Another friend I see often is also my second cousin so I don't think she could do it?

I decided to try people working in town. First we went to the post office, they refused. Library staff said they aren't allowed to do it. I then went to the local pharmacy and the manager and pharmacist took the documents round the back for about 10 minutes whispering to each other then the manager came back and said that she could do it, but she didn't want to because she doesn't know me... Despite us both having ID to prove who we are. It's not tying them into anything it's just them witnessing us signing the document.

I hate confrontation/asking for this so I'm all worked up about this and a bit upset which is an overreaction but I get stressed. All I need is someone to sign it who is over 18, not related to me, nor working for the bank I'm borrowing from. So frustrating.

So I''m going to try our neighbours, I didn't really want to because it has the mortgage value on the paperwork which they'll see but they're a nice couple we chat to semi-regularly so hopefully they won't refuse.

Otherwise I'll need to try to speak to recently bereaved friend or my other friend that I'm distantly related to. Or maybe my bank but who's to say they wouldn't refuse either.

What a faff.
