If you made stuffed peppers with cous cous and roasted vegetables - no meat - how long would you be happy to leave them before reheating. I made some on Wednesday and forgot about them and they're still chilled in the fridge. Too long?

It'll be fine. I often leave food 3 or 4 days and it's always been fine (as long as they're refrigerated of course).

I have a 2 day rule, but I’m in my 60’s so can’t afford to be sick, my adult son 26, says 3/4 days is fine and he doesn’t have a problem tummy wise and batch cooks for 4 days.
