Hoping to make more use of my slow cooker this autumn/winter. What are your favourite recipes?

I like lamb and red wine casserole.

I don't measure just pour and judge it from that.

You can't really fuck anything up with a slow cooker I don't think.

I usually add the following

I fry the onion and garlic in a pan then add to the slow cooker.

Some lamb that's been browned off

Then I add straight into the slow cooker

Chanteray carrots
Half a bottle of red wine - cheap red usually
Packet of baby potatoes cut in half
Few lamb oxo's
Salt and pepper
A carton of passata
Some water if it the meat and veg are not covered.

Then I leave on low for about 8 hours. If you have Instagram there is a guy called Scott Baptie who has really good recipes. The Brazilian chicken is lovely.

I make the fillings for fajitas in a slow cooker:

2x chicken breasts
tsp (each) paprika, chilli powder, cumin
chopped pepper
chopped onion
jar of salsa over everything

Cook on low for 4 hours then mix in a tin of kidney beans and shred the chicken with two forks.

Makes enough for about 8 fajitas.

Sweet potato daal. Red lentils, frozen sweet potatoes, frozen Spinach, half a jar of curry paste, coconut milk, tomato puree and seasoning.

Chicken and chorizo with butternut squash, peppers, any veg, stock, white wine, cream.

Everything I have tried of his has been easy! Not too many ingredients and the ingredients he chooses don't break the bank.

I've done that Brazilian curry one without browning the chicken and it was just as nice 😊

On the chicken and chorizo one do you stir in the cream at the end or put it in the whole time?

We use our slow cooker loads! We have a sear and stew one so the pan bit can go on the hob to brown things off.

Regular meals are...

Whole chicken like a roast chicken, make a foil sling to lift it out with though.

Gammon with a tim of pineapple in juice and a glass of apple juice. Do not eat the pineapple as it absorbs the salt but it makes the gammon lovely and sweet

Chilli con carne

Fajitas as pp mentioned.

Chicken curry this is really easy, just chicken, a few tablespoons of curry paste, a bit of tinned tomatoes, some coconut milk I chill a tin overnight in the fridge and just use the cream that solidify on top. And a few handfuls of mixed frozen veg.

Lamb and chickpea curry if I get yellow stickers lamb. Same recipe as above but chickpeas instead of frozen veg. Can also add spinach.

Sausage casserole just a Schwartz sachet, tin of tomatoes, bag of casserole veg, tin of butter beans. Best if you brown sausages off first.

Spaghetti Bolognese.

Also butternut squash and lentil soup is lovely.

Can also do jacket potatoes in the slow cooker aswell. They aren't crispy though.. sweet potatoes are also good to do like jackets they go almost caramelized

I don't brown a thing before it goes in my slow cooker. It really isn't necessary 🙂

I do scouse a lot. Which is a stew casserole type thing which all mums and nans cook in LiverpoolSmile

I buy a bag of shoulder chops from Iceland and the defrost them, boil them till the meat falls off the bone. Skim most of the fat off but not all and and then add the meat and boiled chop water to the casserole pot. I leave the bones out. Then add your veg. I use carrots and potatoes and then at the end I add gravy granules to thicken. Sometimes mint sauce also depending on who is going to be eating it. I also add lamb oxo.

It's never turned out bad.

Does anyone have any tips to make slow cooker stews and casseroles a bit less watery? I feel like I've put loads of cornflour in today's casserole and it's still pretty soupy.

This is a great recipe, and the suggestion of adding fresh mint and feta when serving really does make it fantastic

Depending on the meal you can add red lentils or grated raw potato for the last hour or so if you’ve noticed how watery it’s getting. To do it just before serving gravy granules work ok, or lift out a good bit of the liquid and some of the veggies, blitz it with a stick blender and stir it back in.
