Healthy cookbooks- lost cooking mojo

Can anyone recommend a cookbook for healthy meals? I’m really struggling with coming up with ideas for family meals at the moment- DS is pescatarian, DD isn’t but is very fussy. I can only think of about 5 meals that everyone will eat and I’m so bored of cooking them.

Anyone tried any of the Amelia Freer books?

Have you tried any of the roasting tin books? Loads of different tray bakes, the green roasting tin is all veggie.

Anna Jones for plant-based interesting dishes, also Ottolenghi Simple and Itsu. Depends how fussy your fussy one is, thankfully my DC are through that stage and we eat a much more varied diet as a result.

The Two Chubby Cubs books are great... there are 3 of them. I haven't got the latest one yet but will soon be adding it and did by it for a friend.
Very much 'everyday cooking', no stupidly expensive ingredients, lots can be frozen, and generally healthy. The 'stories' behind the recipes are amusing as well.

Healthy fish meals I cook regularly.......you could google the recipes for

Squid stew with tomatoes & garlic
Rainbow trout stuffed with fresh herbs
seafood risotto (I use frozen white fish, frozen mussels, prawns, fennel seeds)
squid fried in breadcrumbs with lemon
Mackerel escobeche
Salmon en croute
Various fishcakes & fish pie.

With autumn coming, it's a good time to change to stews, pies and risottos. I always go back to Antonio Carluccio for inspiration. 😋
