Simple Meals You’ve Made Lately That You Love

I love pasta & could eat it every day. Last week I was going to an outdoor theatre performance & made a simple salad with cooled cooked penne, tuna in sunflower oil, sweetcorn, chunks of apple, mayo & loads of black pepper. Absolutely delicious!

Quesadillas.

Stir fry some diced onion and peppers in oil, add leftover roast chicken and fajita seasoning or similar.

Then put a wrap in a frying pan, add grated cheese, salsa and chicken mixture on half of the wrap, a bit more cheese on top then fold in half and shallow fry, turning half way through.

Only takes a few minutes and it's really yummy.

Packet of flavoured couscous, with feta, cherry tomatoes, cucumber, pecans, dried cranberries and raisins all chopped and mixed in.

Tin of lentils, tin of coconut milk, seasoning, curry powder, bag of spinach and cook 15 min or so.

Cauliflower, carrots, broccoli and pumpkin seeds, bit of oil, roast in the oven, then have with rice and hoisin sauce. Sounds a bit odd but it's lovely.

Chop up red onion and celery add in tinned tuna, Mayo, lemon juice, olive oil and white wine vinegar. Salt & pepper, herbs if you have some. Serve on toasted crusty bread.

Also made a really lovely chicken salad that was cooked with peppercorns and star anise and the mixed with carrot, peppers, pak choi and a satay sauce - very easy and delicious. I added rice noodles.

One of my go-tos is simply cook up leeks, mushrooms and diced ham. Add cream cheese and a bit of water to make it into a gloppy sauce then serve with pasta. That might be tonight's meal now that I think of it.

While it doesn't sound simple, in terms of prep time, I make a lovely spinach lasagna.

Frozen spinach in a pot until defrosted, add flour for thickening, milk and some soft cheese, blend until creamy, season with salt, pepper, nutmeg. Add lightly fried onion and bacon bits for added flavour.

Layer with bechamel, cover in cheese, ignore in the oven until cooked.

I spend a total of 15min in the kitchen, the cooker does the rest.

I make a lot of tray bakes, so just put in oven.

also made chicken Schwann Chicken shwarma lots of ingredients but easy.

omelette

pre cooked lentils, goat chees, roasted pepper…any other veg.

fry a shallow, bacon (optional), peas/asparagus/courgette/spinach/ mushroom/ peppers whatever you have add crème fraiche and stir into pasta.

spaghetti carbonara…so quick.

Cherry tomatoes at room temperature, mall amout of fresh garlic, Virgin Olive Oil, a drop of Balsamic, fresh chopped Basil, salt & Pepper - mix together then serve with a beautiful piece of Burrata on toasted sour dough with a Olive Oil drizzled on before toasting . A lovely summer lunch

I actually love just garlic and chilli fried in butter then tossed with spaghetti. It's so simple but really tasty. Easy to throw in some veg too when you're frying off the chilli and garlic....mushrooms work well.

Fried bread with tinned tomatoes and loads of black pepper....food of the gods!

Fish tacos made with some cream cheese and sweet chilli sauce spread on a wrap, with breaded fish and shredded iceberg lettuce. Some spring onions too if you have them.

Nigel slater does a recipe that's just oven roasted onions with thyme added as a topping to cheesy polenta. It's so simple and really comforting.

I cut cherry tomatoes in half and fry them with lots of basil and some mixed herbs . Mix some double cream and veg stock in then stir in cooked spaghetti , soooo nice . Could add mushrooms /prawns/chicken

White fish fillets topped with pesto and breadcrumbs in a tray with some cherry tomatoes and peppers and bake in the oven until fish is cooked and tomatoes etc softened.
Usually around 25/20 minutes max and sever with cous cous , rice or baby potatoes.
So easy and yummy

Also a salad that I discovered years ago in a good housekeeping magazine called egg and bacon salad and still make today, add chopped little gem lettuces to a bowl and add crispy bacon, crispy fried bread cubes, fried whole cherry tomatoes, a couple of chopped hard boiled eggs and squeeze over some lemon juice and add mayonnaise again yum but not too healthy so don't make too often!!

Roast salmon in the oven, doused in soy sauce.
Whilst it's cooking, make up a pack of flavoured couscous, and fry up a pack of stir-fry. Mix the couscous when it's ready with the stir-fry, then put the salmon in top. Delicious tea in about 10 minutes ☺️

I needed to use up some leftover roast chicken and roast potatoes, so I chopped the chicken and added it to a pan with some cooked bacon, then stirred in some garlic and herb soft cheese, milk, frozen spinach and peas and heated through, then put in a pie dish and topped with sliced roast potatoes and grated cheese. Was really nice.

Linguine, fresh crab, fry chilli, garlic and cherry tomatoes in a little olive oil and voila!
Spaghetti with a very simple tomato and garlic sauce with fennel seeds and nduja.
Pancetta cooked in the oven so really brittle, blitz in a food processor with bread crumbs, parsley, lemon zest and black pepper. Use as a crumb to top cod fillets

Young runner beans and New potatoes with a knob of butter.

Grown in containers in the garden.

Cheap, quick, easy, delicious.

I'll be sorry when summer's over.
