what would happen if I didn't register for energy supplies on moving into new purchased property?

The previous owners will inform them of their readings when they move out, a new bill will keep being generated for any use after they have left & you will just be stuck with a bill from the supplier they had.

Yes you would, and you’d owe money for it.

The supplier used by the previous occupants will continue to supply the property unless you switch.

The outgoing owners will close their account. The existing energy suppliers will continue to supply the property at a £pkwh they determine (probably the standard rate) they will issue bills to the occupier if they go unpaid supply will be cut until the bills (incl court fees if it gets that far) are paid.

I didn’t register for water when I moved into my current rental, 6 months later no bills yet so just waiting to see

im hearing of people doing this more and more

It will bite you on the arse down the line, they will bill you for what you've used at the full whack rate. You'll then have to pay, or refuse, in which case they will chase via payment agency etc.
