Unfortunately, long Covid is a very poorly understood condition, and this includes both allopathic medicine and Traditional Chinese Medicine.

Having said that, there are some acupuncturists that are having very good results, particularly if they are also using herbs. I would encourage you to shop around and ask them directly about their experience with long Covid. For example, I have had very mixed results so I am always very cautious before accepting a long Covid patient.
