Fresh, delicious, simple meals

Currently stuck in hospital and have another 7 nights to go. The food is all ready meals and packet sandwiches and it's making me feel so sluggish.

To make myself feel better I am doing the Tesco shop which will arrive the morning I am due home.

What are the freshest, most delicious recipes you can think of?

My choice would be a fresh tuna steak, for a delicious nicois, plenty of good balsamic vinegar (not authentic to a nicois but delicious none the less), a boiled egg with just set yolk, and a fresh green salad with green beans just blanched so they keep a real bite. Followed by a bowl of beautiful strawberries. Heaven!

Salmon fillet steamed in a foil parcel with butter and lemon, steamed asparagus. Maybe some baby potatoes too?

I would be craving something really tasty so I would go for a ramen soup with noodles and lots of green vegetables, probably some chicken but maybe king prawns?

Mines fresh pasta - fry off some fresh chilli and garlic in lots of olive oil and mix the whole lot together. Served with tricolore (tomatoes, avocardo, Mozzarella, fresh basil and balsamic.

Ah something simple like a griddled flattened chicken breast with homemade pesto and a delicious salad. Plus fresh crusty bread.

I love fresh pasta with cherry tomatoes under the grill and loads of olive oil and salt & pepper
Add to pan with chorizo, garlic, chilli and serve with rocket salad

I make huge salads most days with squash, aubergine, cous cous/grains, raw courgette, spinach, tomatoes, feta crumbled over - I like lots of spices in it

I like Greek yoghurt with loads of berries and a powdered nut mix over it

A piece of nice fish grilled with loads of lemon, new potatoes, salad or veg

pan fried steak with as much lettuce, tomatoes, red onions, red peppers (all raw) with balsamic or French dressing on the side, not other carbs and if it is too boring, coleslaw and baby potatoes.

Salmon fillet, leeks, potatoes, lemon juice and anything else you fancy! Sweet potatoes are great in it. Lemon slices on top works best.

Put it all into a tin foil parcel and seal it. Bang in oven for 25-30 mins and it's ready! Minimal dishes and healthy, tasty food!

Might be a bit of a faff but any blended vegetable soup (carrot, onion, celery, coriander or currently making a lot of creamy courgette soup: onion, garlic, courgette, kale blended then add a bit of double cream), with crusty baguette and butter.

Greek or Caesar salad with lots of extra veg, cucumber, tomatoes, carrots.

Wraps with tofu/hummus/avocado with carrots, cucumber, peppers, radish, lettuce.
