Restaurants in London for a special birthday. Recommendations?

My DD1 is turning 30 soon. We are planning a weekend in London to celebrate but is at short notice due to a number of things that could not have been foreseen. It will be the first Sunday in September and lots of posh restaurants seem to be shut on a Sunday. Has anyone got any thoughts on places which are likely to have space (lunch or dinner) and that are very special? Thank you.

Brat in Shoreditch is absolutely incredible. If you like fish, the turbot is a must (and basque cheesecake for dessert). It will be a lovely treat for your celebrations. Enjoy!

@RemusLupinsBiggestGroupie I'm not sure it would be my first choice for a vegetarian to be honest, there were lots of veggie small plates and sides but from memory the mains are all about meat/ fish cooked on the open fire, I don't remember a vegetarian option.

Sketch is really fun - but v expensive. I always think The Wolesey is a safe bet. I also love J Sheekeys in Covent Garden - but essentially a fish restaurant.

Once a restaurant is known more for its prices than the food (Sketch, Per Se, possibly Salt Bae) then it’s definitely off my list.

The Peninsula Restaurant next to the o2.

Fine dining restaurant on one of the top floors of the hotel, with great views over Canary Wharf. Is higher rated on Tripadvisor than a lot of restaurants that are being suggested on here. The food was amazing and service top notch. There is also a really nice bar on the other floor. If you have the money it is also a hotel if you wanted to stay the night.
