Gazpacho - anyone got a quick and foolproof recipe?

Oh I'm craving it in this heat but have never made it.

Yes I know there's loads of recipes online but I trust you lot more than Google

Can't help with a recipe, but if you want the lazier option- Sainsburys sell a pre-made one which is delicious.

Agree with this. It’s delicious. We tried making it several times, but this ready made fresh version is the closest we’ve ever had to gazpacho in Spain and Portugal; and also our Portuguese friends in Portugal buy it regularly, its really good, and all natural ingredients with no nasties.

Alvalle gazpacho is the best!

I actually do make my own in our smoothie maker because I am a gazpacho addict, and the secret is mostly tomatoes with a bit of cucumber and pepper, onion if you want it, the tiniest bit of wine vinegar, a mini squizz of lemon juice, and not too much garlic. And a big dollop of good olive oil. When I learned to make it from my Spanish friend, she taught me that you took a piece of bread the size of an almond and soaked it in wine vinegar and added that per litre.
