Madeira cake almonds or not?

I’ve got a friend popping over at the weekend and I thought a Madeira cake might be nice. I realised I’d never made one. Well of the recipes I’ve looked at half have ground almonds and half don’t. For a fairly plain cake this is surely quite I vital difference.

So almonds or not?

Always with ground almonds. It’s where the flavor comes from for the most part.

Well that’s I thought. Without the almonds it would be too plain.

Also the almonds add moisture to the cake.

I bake a bit and do loads of variations on this cake.

Adding zest of lemon or orange is lovely.

Chopping a couple of twix bars in..divine.

Pressing some frozen raspberries into the mixture, baking it and then when just out of the oven, covering it with grated white chocolate...massive hit.

Adding a couple of desert sppons of bought lemon or passionfruit curd, also is lovely.
