What are healthy meals? Or is there a good book on it?

Something balanced, equivalent to a half plate of veg, quarter of fibre rich carbs, quarter protein (chicken, fish, eggs, tofu, etc) and some fat (cooking oil, avocado, cheese etc).

How that translates into a meal is up to you as there's lots of options. BBC good food's Healthy meals section is full of nice ideas - just keep the above proportions roughly in mind.

Go for simple dishes.
Produce not product based.
Aim to eat as much veg as possible, try to get in a minimum of two servings with both lunch and dinner, if you can get it into your breakfast too even better (grilled tomatoes, mushrooms are obvious choices).
In the summer I think it's even easier. Most of my meals are some form of protein (mainly chicken, fish, egg or veg based protein) with some kind of flavouring or marinade either baked or grilled with salad or veg.
