Which is the more usual/correct: pax nobiscum or pax vobiscum. Thank you.

Pax vobiscum - peace be with you, as per liturgy

Pax nobiscum - peace be with us, I guess, not part of the liturgy but from google appears to be a title of a book.

Definitely vobiscum. I remember whole lumps of the Tridentine Mass. Especially the last bit" Ite, missa est". Time to go home and have brekky after fasting.
