What I’ve eaten today (healthy/healthier version)

I love when I see a ‘what I’ve eaten today’ thread and haven’t seen one for a while so I thought I would ask, ‘what have you eaten today?’ but a healthier version as I am really looking to revamp mine and dc eating patterns (DH does eat quite healthy already).
I go too long between meals and get hungry then gorge on crisps/bread etc whilst preparing dinner then am too full to finish my actual meal which is far from ideal.
I have also been reading the recent thread about Ultra Processed Foods and want to try and do a kind of 80% really good eaten plan with 20% for the not so good stuff.
So, if you have a relatively healthy diet can I ask what you have eaten today or normally eat in a day?

Salad for brunch( spinach, carrot, scrambled eggs, cheddar, pecan nuts, sesame seeds, flax seeds, sesame dressing)
2 chocolate cookies.
Spag Bolog without spag.
I'm trying to loose some weight, so trying to reduce carb.
Lots of green tea and iced coffee all day long.
