bbq-ing frozen white fish fillets

Thinking of putting on a skewer with scallops. But will they just disintegrate into mush?

Yes, I don’t think they’ll hold up well on a skewer. Maybe wrap them in foil instead.

Depends on the quality...how long they've been frozen for
Good/not long...should be ok.

Cut into chunks whilst still frozen and put on skewers.
They'll probably drop off the stick once defrosted/before cooking if it's a bit crappy.

Yes. I've only ever successfully cooked whole fish on the bbq in foil packets....never managed a fillet, and definitely not on a skewer.

Also, I would want to make sure scallops were cooked to the optimum level. Not overcooked waiting for something else on the same skewer. Don’t ruin your scallops!

Wrap your white fish in prosciutto then skewer!

I like the prosciutto idea! And yes to cooking scallops separately. We've got a grill plate on the bbq so can do both on there.
